Granola Bars

Ingredients
  • 1 cup peanut butter
  • ⅔ cup honey
  • 1 teaspoon vanilla extract
  • Heaping ½ teaspoon sea salt
  • 2½ cups whole rolled oats
  • ⅓ cup mini chocolate chips
  • 3 tablespoons pepitas
Directions
  1. Line an 8x8 baking pan with parchment paper.
  2. In a large bowl, stir together the peanut butter, honey, vanilla, and salt, until smooth.
  3. Add the oats, chocolate chips and the pepitas (or nuts). The mixture might seem dry at first, but keep stirring and it'll come together.
  4. Press firmly into the pan. Top with another sprinkling of salt. Chill for at least 1 hour, then slice into bars.
Store bars in the fridge.

Jalapeño Popper Cups

Ingredients
  • 24 mini phyllo tart shells
  • 8 ounces cream cheese, softened
  • 1 cup shredded Cheddar cheese
  • 4 oz jar diced jalapeños
  • Optional: imitation bacon bits
Directions
  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Place phyllo cups onto a baking sheet.
  3. Stir together cream cheese, Cheddar cheese, and jalapeños in a bowl.
  4. Spoon mixture into phyllo cups. Sprinkle bacon bits on top.
  5. Bake in preheated oven until golden brown, about 15 to 20 minutes.
Serve warm.
You can replace the diced jalapeños with pepper jelly for a sweet and spicy treat!
