Granola Bars
Ingredients
- 1 cup peanut butter
- ⅔ cup honey
- 1 teaspoon vanilla extract
- Heaping ½ teaspoon sea salt
- 2½ cups whole rolled oats
- ⅓ cup mini chocolate chips
- 3 tablespoons pepitas
Directions
- Line an 8x8 baking pan with parchment paper.
- In a large bowl, stir together the peanut butter, honey, vanilla, and salt, until smooth.
- Add the oats, chocolate chips and the pepitas (or nuts). The mixture might seem dry at first, but keep stirring and it'll come together.
- Press firmly into the pan. Top with another sprinkling of salt. Chill for at least 1 hour, then slice into bars.
Store bars in the fridge.
Jalapeño Popper Cups
Ingredients
- 24 mini phyllo tart shells
- 8 ounces cream cheese, softened
- 1 cup shredded Cheddar cheese
- 4 oz jar diced jalapeños
- Optional: imitation bacon bits
Directions
- Preheat an oven to 350 degrees F (175 degrees C).
- Place phyllo cups onto a baking sheet.
- Stir together cream cheese, Cheddar cheese, and jalapeños in a bowl.
- Spoon mixture into phyllo cups. Sprinkle bacon bits on top.
- Bake in preheated oven until golden brown, about 15 to 20 minutes.
Serve warm.
You can replace the diced jalapeños with pepper jelly for a sweet and spicy treat!
